HACCP Development-

It is a legal requirement for all food businesses to ensure they have implemented an effective Food Safety Management System in their premises. A vital part of every company’s Food Safety Management Systems is HACCP (Hazard Analysis Critical Control Point) this assesses specific hazards and the measures that can be put into place to manage these hazards and reduce the risk.

HACCP was originally developed in the 1960’s for NASA to ensure that their food was safe to consume due to the potential catastrophic consequences of food poisoning whilst in space. Later in 1992 the seven principles of HACCP were defined, followed by the application of CODEX Guidelines in 1993; forming the basis of modern international Food Safety Regulations.

The EU requirement for a Food Safety Management System based on the HACCP Principles was set out under (EC)852/2004 and put into place in the UK under the Food Safety & Hygiene Regulations 2013. The implementation of the HACCP based on CODEX guidelines is a pivotal point, moving towards a proactive approach to prevent food related illnesses.
